Prior to starting Domaine Saint Sylvestre, Vincent Guizard worked under the guidance of the well-known Oliver Jullien (Domaine Mas Jullien) where he learned to vinify and produce among the greatest wines in Languedoc.

Between 2003 to 2010, he joined Domaine de Montcalmès with 6 hectares of vines that belonged to him and helped the estate to rise to a high level.

Vincent left Domaine de Montcalmès in December 2010 and, together with his wife Sophie, they started Domaine Saint Sylvestre with the 6 hectares of vines owned by Vincent and which used to be part of Montcalmès vineyard. Sophie & Vincent make every possible effort in the vineyard to obtain the excellence of this terroir.

Each year, they try new things in the vineyard, biodiversity improves constantly and that results in a great progression of their wines. The vineyard work is done by hand: pruning, trellising, disbbuding, green harvest (to obtain a yield around 20 hl/ha!).

Grapes are harvested by hand with selective picking of the more qualitative grapes on the vine trunk when it’s necessary. They are destemed, crashed by varietal and by parcel.

White wines are directly pressed, blended and vinified in Burgundy oak barrels where prestigious Burgundies wines were aged. They age in these barrels for 12 months.

Red wines are vinified by grapes and by parcels in stainless steel vats. The ageing of the reds last for a period of 24 months in Burgundy oak barrels. Wines are bottled depending of the moon, red wines are not filtered and not fined.
